We all have at least one: that contraption at the back of the kitchen drawer that we don’t quite know the origin or use of. Each week, the folks at The Southern Food and Beverage Museum rummage through the dark corners of their kitchen drawers for an enigmatic item. This bowl comes directly from France, where it is commonly used to whip egg whites into fluffy submission. The copper ions react with the egg whites to produce a stronger, more durable whip. See it in action here at the world famous La Mere Poulard in Mont St. Michel.
